Making the perfect green pesto
26 Feb
Green pesto is a combination of cheese, olive oil, basil leaves, garlic and salt; which means that if you have a little bit of time to read up on pesto you can easily create your own pesto sauce that will thrill and delight your guests. In fact, in less than an hour you can have a great pesto out on the table.
To start, grind about a fourth of a cup of pine nuts in the blender to help add a unique flavour to the sauce. You want the pine nuts to be crumbled but not a powder, so about thirty minutes in a standard blender should do it.
Next, toss in ½ cup of Parmesan cheese and mix it with the pine nuts until it is fully grated and even. The texture of this should also not be powdered, but instead clumpy and thick.
Third, add minced garlic and basil leaves slowly to the blender and then grind the mixture fully with the cheese and the nuts. The leaves will all be shredded in different sizes, just make sure that they do not grind down so far that they become watery.
Add some salt and pepper, a touch of lemon if you plan on refrigerating the sauce, one tablespoons of garlic, and one tablespoon of olive oil and you will have the perfect green pesto ready to serve! The pesto will taste great mixed into pasta sauce, on bagels, or even as a coating for chicken.
